Chocolate Chip Loaf Cake
Leif's grandmother made a date nut loaf cake once, and 4-year-old Leif commented that it would be better with chocolate. This is the recipe she ended up with.
Mix flour and salt, set aside. Cut up dates and sprinkle with baking soda, cover with water; set aside. In mixing bowl cream shortening and sugar together. Add eggs one at a time and then date mixture a little at a time alternating with flour mixture. Add vanilla and chocolate chips. Pour into greased 9" × 5"pan and bake at 350°F until done (a little less than an hour, maybe an hour).
This one tastes even better after being frozen.
