Blueberry Bread

About the Recipe

A milk-free blueberry sweet bread, for a 2 lb loaf in a bread machine.


1¼ cup soy milk

1 egg

¼ cup water

3 Tbsp margarine, softened or cut up

4 cups white flour

¼ cup sugar

1 tsp salt

¼ tsp ground nutmeg

1¼ tsp active dry yeast

½ cup dried blueberries


Add ingredients to bread machine, following the machine's directions for order and placement (ours asks for the liquid ingredients on the bottom, then some of the flour as a shelf, then the remaining dry ingredients with the yeast in a well on top, reserving the blueberries). Set bread machine to "sweet bread", or "regular" cycle with dark crust, and turn on. Add the blueberries at the appropriate time (our machine beeps after the first rise to let us know that it's time to add them).
