About the Recipe

We enjoy the chicken at Pollo Loco, with its tasty blend of citrus and spices. Maria's been trying out various marinades to see if we can make something even better. We really like this one, but it's definitely not the same as theirs.

Ingredients

¼ cup olive oil

2 Tbsp lime juice

3 cloves garlic, crushed

½ small onion, finely chopped

1 tsp salt

½ tsp cumin

⅛ tsp dry mustard

½ tsp powdered sugar

¼ tsp ground coriander

1 Tbsp parsley flakes

Preparation

Mix together, use as chicken or fish marinade.

Modifications

Use a small bunch cilantro instead of coriander & parsley, if desired.
