About the Recipe
Easy side dish that our family enjoys.
3 Tbsp (45 ml) Grey Poupon or other Dijon mustard
2 Tbsp (30 ml) olive oil
1 clove garlic, minced
1 tsp (5 ml) dried Italian seasoning
2 lb. (1 kg) red potatoes, cut into bite-sized chunks
Preheat oven to 425°F/220°C. Oil a large pan or baking sheet (or use cooking spray).
In a large bowl, mix all ingredients except potatoes, stir until blended. Toss potato chunks in bowl to coat. Spread coated potatoes on pan as evenly as possible.
Bake at for 35 to 40 minutes or so, stirring occasionally, until potatoes are tender.
