Leif's great-grandfather loved these, and his daughter made his favorites.
2 large russet potatos, peeled
½ tsp salt
cracker meal, as needed
Grate the potatos and onions, add salt, and mix together. Gradually add cracker meal, mixing continuously, until the liquid is all absorbed. Mix in egg. Drop by large spoonfuls onto greased frying pan, cook one side until browned, flip and cook other side until browned. Serve with sour cream and applesauce.
Instead of cracker meal, you can use crushed saltines, bread crumbs, or flour.
To minimize the need for cracker meal or its substitutes, you can drain the potato and onion mix before adding the salt.
