About the Recipe
Leif's mother made vanille kranse (vanilla wreaths) at Christmas time. They're a traditional Danish vanilla-flavored butter cookie, and can be found in tins in grocery and specialty stores before Christmas. The fresh-made ones taste better than the tinned ones, in our opinion.
Ingredients
1¼ cups sugar
2 eggs
1½ cups butter
¼ tsp almond extract
½ tsp vanilla
3½ cups flour
Preparation
Mix sugar and eggs. Stir in butter, almond extract, and vanilla, and finally the flour. Grease cookie sheet well with butter.
Place batter in pastry tube with star tip, and squirt onto sheet in small rings.
Bake in 300°F oven until golden brown.
Substitutions
Instead of the almond extract, you can use ½ cup finely chopped almonds.
Vegan recipe: Substitute Miyoko's European Style Cultured Vegan Butter for the butter, 6 Tbsp Just Egg for the eggs, and add â…› tsp salt.
