About the Recipe
Leif's grandmother made a date nut loaf cake once, and 4-year-old Leif commented that it would be better with chocolate. This is the recipe she ended up with.
Ingredients
3 cups flour
1 tsp salt
2 cups dates
2 tsp baking soda
2 cups boiling water
½ cup shortening
1½ cup sugar
2 eggs
2 tsp vanilla
2 cups chocolate chips
Preparation
Mix flour and salt, set aside. Cut up dates and sprinkle with baking soda, cover with water; set aside. In mixing bowl cream shortening and sugar together. Add eggs one at a time and then date mixture a little at a time alternating with flour mixture. Add vanilla and chocolate chips.
Pour into greased 9" × 5"pan and bake at 350°F until done (a little less than an hour, maybe an hour).
This one tastes even better after being frozen.
