Lemon Bars

Another one from Leif's grandmother. She had a Eureka lemon tree in her yard, and was always trying to find recipes to use the lemons. This one has a strong lemon flavor, and it always disappears quickly.



Sift together 2 cups flour and powdered sugar. Cut in butter until mixture clings together. Press mixture into a 13"× 9" inch glass baking dish. Bake at 350°F for 25 minutes or until lightly browned.

Beat together eggs, granulated sugar, lemon juice, and peel. Sift together the remaining ¼ cup flour and baking powder. Stir into egg mixture. Pour over baked crust. Bake at 350°F 25 minutes longer. Sprinkle with additional powdered sugar. Cool.
